SALAMAGUNDI

TEX-MEX HOT SAUCE
One 16 ounce can of peeled stewed tomatoes
1/2 medium onion
4 fresh jalapeno or 8 serrano
peppers
2
cloves garlic
1 tsp. olive oil
1
tsp.
vinegar
Salt
to
taste
2-3
sprigs
fresh
cilantro
Mash
the
tomatoes.
Chop
onion,
peppers,
garlic
& cilantro.
Combine all ingredients
in a bowl and mix. You have it right when the colors match the red,
green & white of the Mexican flag. You can use fresh tomatoes of course.
You can also do this in a blender, just whirl all the ingredients very
briefly after mixed. Great on everything!

RECIPES Gen's Meat Loaf
1 1/2 lbs. ground beef
1 egg,
beaten
1 onion, chopped
1
1/2 tsp. salt
1/2 can tomato
sauce (8 oz.)
1/4 tsp. salt
1 cup fresh bread crumbs
Mix above ingredients, form
into loaf. Place in shallow pan at 350 degrees. Meanwhile, combine
the following:
1/2 can tomato sauce (8 oz.)
1 cup water
2 tbsp. brown sugar
2
tbsp. vinegar
2
tbsp. mustard (regular yellow)
Pour sauce over meat loaf:
bake about 1 hour more, basting frequently. Serves 4-6. I usually
add a little garlic powder and make a bit more of the sauce so it really has
lots of sauce on it.
Enjoy! This was one of my Mom's favorites.

But, the spirits, two together
in body and soul,

These two cats are MGD and Spyder, a brother and sister who joined my home after
Tigress passed away. Spyder is the calico. They are wonderful cats, and my
life would not be complete without them. |
This is Tigress, who was one of the neatest cats ever! She lived to be 16 1/2
years young and had the softest fur I have ever felt. See her new memorial
card below, right under her daffodil! |
Spyder and MGD are two of my three cats and they are going to be nine years old this
April 1st. I adopted them from the Animal Defense League in San Antonio in 1993. They were preceeded by Tigress, who lived a happy long life from
1977-1993. Here are photos of Spyder and MGD and also one of Tigress.

This is a page about a lot of different things. I will include some of my favorite
photos, a few recipes, poetry and whatever else comes to mind. Salamagundi
is a salad made with tomatoes, onions, bell peppers, carrots and cucumbers
and is marinated in vinegar (preferably wine vinegar). My mother used
to serve it often, and as it is a combination of many things, I thought to call
my page Salamagundi. Check out the images as many have links to cool
sites I have found. Please be patient, it takes a minute or two to load.
In searching the web, I found out that the original recipe for Salamagundi
is quite different than my Mother's version. It was a favorite pirate food.

I am a native Texan and live in San Antonio, Texas. I am proud to be a Texan
and so are my three cats. I am very proud of the fact that their photo
