Title: EVERGLADES CABBAGE 3 Large Heads Green Cabbage 1/2 Tsp Butter Regular EVERGLADES SEASONING Aluminun Foil Cut Cabbage into about 8 pieces. Tear off Foil for 16 pieces. Lay each pieces on foil. Put 1/2 tsp butter on each piece and sprinkle liberally with EVERGLADES SEASONING. Fold foil up tight then place on BBQ grill in pan of water for about 1 hour or until cabbage is tender. It can also be cooked in the oven at 350 degrees. Whole, Cleaned, Scaled Trout or Redfish EVERGLADES SEASONING 1/2 cup Celery 1/2 cup Onion 1/2 cup Tomato 1/2 cup Bell Pepper Bacon strips Lemon & butter (optional) Preheat Oven to 350 degrees. Sprinkle EVERGLADES SEASONING outside AND inside fish. Chop celery, onion, tomato and bell pepper and mix together. Place this mixture inside fish. Wrap fish with bacon and secure with toothpicks. After Baking 5 minutes, turn, pour lemon and butter mixture over fish and continue to bake another 3 to 5 minutes or until done. Be careful NOT to overcook!

Barbara O'Keefe - Miami, FL ---------------------------------------------------------- SCRAMBLED EGGS EVERGLADES Combine: 4 eggs, 3/4 tsp EVERGLADES SEASONING, 1/4 c milk Melt: 2 Tbsp margarine or butter Add: 2 whole scallions, chopped

Saute scallions in butter until tender; add egg mixture. Scramble together until desired doneness.

5 lbs of beef or pork ribs
Combine: 1 c Ketchup, 2 t brown sugar, 2 tsp Worcestershire Sauce, 2 tsp vinegar, 4 squirts Tabasco Sauce, 3 T yellow mustard and 1 t EVERGLADES SEASONING.

Sprinkle ribs generously 2 hours before cooking with EVERGLADES SEASONING. Heat the combined ingredients, place ribs on cookie sheet and brush ribs on both sides with half of the sauce. Bake at 300 degrees, turning once and brushing with the remaining sauce.

Jean Prophet - LaBelle, FL ---------------------------------------------------------- BEST EVER MEATLOAF Yield: 4 -6 1 Egg 1 1/2 lb Ground beef 1 c Bread crumbs 1/4 c Chopped onion 1 ts Salt 1/2 ts Dry mustard 1 Celery stalk, chopped fine 1/2 ts Everglades Seasoning 1/4 ts Sage 1/8 ts Liquid garlic 1 tb Worcestershire Mix all together, and bake 375 degrees for one hour ---------------------------------------------------------- DEVILED EGGS EVERGLADES Yield: 4 servings 3 ea Large Hard Cooked Eggs 1/2 ts Prepared Mustard 2 tb Mayo Or Salad Dressing EGS to taste Cut eggs lengthwise into halves. Slip out yolks and mash with a fork. Mix in remaining ingredients. Filltes with yolk mixture, heaping it up lightly. ---------------------------------------------------------- FLORIDA STYLE ZESTY BARBECUE SAUCE Yield: 1 quart 1/2 c Chopped onion 3 tb Worcestershire 1 Clove garlic, crushed 2 ts Mustard 1/4 c Oil 1 ts EVERGLADES SEASONING 1 c Catsup 1/4 ts Thyme 1/2 c Water 1 Lemon or lime, thinly sliced 1/4 c Brown sugar ds Tabasco Saute onions in oil, add rest of the ingredients, simmer for about 15 minutes. Makes a great gift. ---------------------------------------------------------- STUFFED EGGS EVERGLADES & TUNA Yield: 12 servings 1 Dozen eggs, hard boiled 1 cn Tuna 1 Onion, small, chopped fine Mayoniase to taste EVERGLADES SEASONING to taste Parsley sprigs, olives Cool and peel hard boiled eggs. Cut egges in half the long way. Scoop out the yolks. Mix yolks with tuna and onion. Add mayonaise, EGS to taste. Fill the white part of the egg with this mixture, top with a parsley sprig or olive slice. From St. Mary's Church "Heavenly Foods" Cook Book, Scituate, MA ---------------------------------------------------------- TATERS ALA MEG Yield: 4 servings 4 Medium potates EVERGLADES HEAT 2 tb Olive or canola oil Take 4 medium potatoes and wash well. DON'T peel! Cut into about 1 inch pieces. Put about 2 TB of olive oil or canola oil (if you're into low satfat or corn oil will do) into a bowl. Put the 'tatoes in the bowl and toss until coated with the oil. Sprinkle liberally (this is Kennedy country!) with the EVERGLADES HEAT and toss again. Then spread them out on a cookie sheet and bake at 450 for about 15 - 20 minutes, stirring occasionally so they brown evenly and don't stick to the pan. They're yummy! This'll serve 4 people (or in my house, 3!). Submitted by: Meg Alfoni, Ipswich, MA ---------------------------------------------------------- ZUCCHINI PIE Yield: 8 -10 3 c Very thinly slice zucchini 1 ts EVERGLADES SEASONING 1 c Bisquick 1/2 ts Oregano 1/2 c Chopped onion 1 Clove garlic, crushed 1/2 c Parmesan cheese 1/2 c Vegetable oil 1 tb Parsley 4 Eggs, beaten Grease 13x9x2 pan. Mix all ingredients, it looks HORRIBLE, then spread in pan. Bake at 350 degrees about 30 minutes. This freezes well, and cut into squares it can be eaten warm or cold. --------------------------------------------------------------------------- Title: Bobbi's Hamburger Upside Down Casserole Yield: 4 servings 2 1/2 c Elbow macaroni 3 tb Butter 1/2 c Minced onion 1 lb Hamburger 1 8oz can tomato sauce EVERGLADES SEASONING to taste 1 8oz grated cheese 1/4 ts Oregano 3/4 c Milk 3 Eggs, beaten Cook macaroni in salted water until just tender. Drain. In hot butter, saute onion. Add beef, cook until brown. Drain. Stir in tomato sauce, salt, pepper, oregano. Simmer a few minutes, then spread over bottom of greased two quart casserole. Toss macaroni with grated cheese, and arrange on top of hamburger. Pack down. Combine eggs and milk, and pour over top. Cook 350 degrees, 1 1/2 hours or until macaroni is golden and custard is set. Remove from oven, let stand a few minutes. If you have used a bowl type casserole dish, you can invert the casserole onto a serving dish. This is an easy dish to make. Sometimes I also put in a can of corn or green beans to make a complete meal. Barb O'Keefe --------------------------------------------------------------------------- Title: Bobbi's Macaroni & Tuna Salad Yield: 10 servings 1 lg Cn tuna drained 1 tb Grey Poupon 1 Green pepper, chopped 1 tb Kraft's Horseradish sauce 1 Small onion, chopped Mayonaise, Lite or regular 2 Stalks celery, chopped EVERGLADES SEASONING 2 Green onion, diced 1 pd 16 oz macaroni 3 Hard boiled eggs, chopped 2 Carrots, diced Cook and drain macaroni. Chop green pepper, onions, celery, carrots, green onions. Place vegetables and chopped eggs in large bowl, drain tuna and flake into bowl. Add seasonings to taste. Add drained and cooled macaroni. Now here comes the hard part. I don't measure the mayonaise, I "judge"...what it needs about three whalloping tablespoons, add mustard and horseradish. Blend all together and refrigerate. You might need to add more mayonaise before serving. This is the recipe that I'm asked to make for the Pot Luck Luncheons at Norweigan Cruise Lines, where I work, it is always a winner! Barbara O'Keefe --------------------------------------------------------------------------- Title: Bobbi's Special Chicken Yield: 4 servings 4 Chicken breasts 1/4 c Melted margarine 1 cn Cream of chicken soup EVERGLADES SEASONING 1 c Grated cheddar cheese Parmesan cheese 1 c Stuffing mix, unprepared Grease a casserole dish. Place 4 chicken breasts (can be either boneless or with bone, frozen or thawed) in bottom of casserole. Sprinkle cheese over breasts. Truthfully, any type of cheese could be used, I used cheddar. Cover with undiluted cream of chicken soup (again, you could probably use any cream soup of choice). Add EVERGLADES SEASONING to taste. Cover with UNPREPARED Stuffing mix. (I used Stove Top) Pour melted margarine over this and sprinkle some parmeson cheese over entire casserole. Bake at 350 degrees 40-45 minutes. Serve with noodles or rice. The soup makes a delicious gravy. --------------------------------------------------------------------------- Title: Georgia's Hamburger Casserole Yield: 4 servings 2 tb Oil 1 c Tomato sauce 1 1/2 c Macaroni 1 lb Ground beef 2/3 c Water 1 Green pepper, chopped 1/2 ts EVERGLADES SEASONING 1 pk Dry onion soup mix 1/4 ts Pepper 1 ts Chili powder 1/2 ts Oregano 3 cn Tomatoes Brown beef in oil, drain. Mix all ingredients, and beef in casserole dish. Bake at 375 degrees, about 30 minutes. --------------------------------------------------------------------------- Title: Jean's Quick Beef Stew Yield: 1 pot full 2 lb Stew beef frozen 1 pk Dry beef stew mix Several potatoes Several carrots Several onions Sliced green pepper, optnl 1/2 c Water EVERGLADES SEASONING t/taste Put frozen meat in crock pot. Peel potatoes and carrots and place around meat. Add onions and green peppers - Sprinkle EVERGLADES SEASOING over meat & veggies. Add dry stew mix on top of everything and all a small amount of water, as the frozen meat will generate moisture as it cooks. Set your crock pot on low, if starting early in the morning, or on high if starting around noon time...leave on high setting for a couple of hours, then turn down. By supper time everything is cooked and it is delicious! Courtesy: Jean Prophet, LaBelle, FL ---------------------------------------------------------------------------- Title: Karin's Hamburger Pie Yield: 4 -6 1/2 lb Ground beef 1/2 ts Oregano 1/2 c Chopped onion 2 Eggs 1/4 c Water 3/4 c Flour 3/4 ts Cumin 3/4 c Milk 1/2 ts EVERGLADES SEASONING 1 ts Cornmeal 1 pk Cream cheese, 8 oz Brown meat, drain, add onion, cook until tender, add cream cheese and water, stir over low heat until cheese is melted. Stir in seasonings. Combine egg, flour, salt and milk, beat until smooth (I put mine in a blender). Pour flour mixture into a nine inch greased pie plate, sprinkle with corn meal and then spoon meat mixture over the top. Bake at 400 degrees, for 35 minutes or until brown. Garnish with cut tomatoes. For hot and zesty pie, add 4 oz can chopped chili peppers to meat sauce. ---------------------------------------------------------------------------- Title: Lemon Barbecue Chuck Steak Yield: 4 servings 1 Good size chuck steak 1/3 c Lemon juice 1/3 c Oil 1 ts MSG 1 ts Onion flakes EVERGLADES SEASONING or CACTUS DUST t/taste 1 ts Grated lemon peel 2 ts Worcestershire 1 ts Dry mustard 1/8 ts Pepper Mix marinade, and place chuck steak in. Refrigerate, turn frequently. Marinate at least two hours. Broil 4 inches from coals. Press into loaf pan and bake 350 degree oven 1 1/2 hours or until done. Courtesy: Alice Hinds --------------------------------------------------------------------------- Title: Mom's Sheppard Pie Yield: 4 -6 1 1/2 lb Ground beef 1 Can stewed tomatoes 1/2 c Grated sharp cheese 1 8 oz can tomatoe sauce 4 Strips of bacon or more 1/2 ts EVERGLADES SEASONING Enough mashed potatos to 1 ts Onion flakes Cover casserole 1 Can veggies (corn or gr beans) Brown and drain hamburg meat. Add tomatoes, sauce, EVERGLADES SEASONING and onion flakes. Place in casserole dish. Add drained veggies over top. Smother all with mashed potatoes. Sprinkle sharp cheese and Parmesan cheese on top. Then place on strips of bacon. I've tried it without the bacon strips and it just doesn't taste the same! Bake 375 degrees for about 35 minutes or until bacon is crispy. ---- ---------------------------------------------------------------------------- Title: Oven Barbecued Chicken Yield: 4 servings 2 1/2 lb Chicken, cut into pieces 1/4 c Water 1/4 c Vinegar 3 tb Oil 1/2 c Chili sauce or catsup 3 tb Worcestershire 1 tb Dry mustard EVERGLADES SEASONING to taste 1/2 ts Pepper 2 tb Chopped onions Combine all ingredients, except chicken, in a saucepan; simmer 10 minutes. Wash and dry chicken and place in large baking pan. Pour half of the barbecue sauce over chicken and bake uncovered 50-60 minutes at 350 degrees, basting with remaining sauce every 15 minutes or so. You can also take the chicken, immerse it in the barbecue sauce, remove and cook over charcoal..... Compliments: Alice Hinds, Pensacola, FL ----------------------------------------------------------------------------- Title: Picadillo Yield: 4 servings 1 lb Lean ground beef Olive oil 1 Onion, diced 1 Green pepper, chopped Garlic to taste 1 cn Stewed tomatoes 11 Green olives chopped EVERGLADES SEASONING to taste Brown pepper and onion in olive oil. Add meat and brown. Add seasonings, olives and tomatoes. Simmer for about one half hour. Serve over rice or noodles. A real quick meal.
