                          MEAT PIE
   After a big dinner, what do you do with the leftover meat, gravy, potatoes, onions, string beans, carrots, broccoli?  Here is an excellent idea.  All meat & vegetables should be pre-cooked  unless they are added in small quantities &

thinly sliced or diced, since cooking fresh meat or veggies releases water which would make the pie float.   Line a pie dish w/pie crust.  Pinch around edges.  Layer w/slices of pre-cooked meat, potatoes, onions, veggies, interspersed w/additional frozen peas, thinly sliced carrots, sliced canned potatoes,  if needed, & freshly chopped parsley.  Add leftover gravy.  If there isn't enough to fill the dish, mix in canned gravy or white sauce made w/2 tbsp. each of flour & butter, sautéed until golden, then thinned with a cup of milk & seasoned w/salt, pepper & white wine.  Add a top crust.  Pinch around the edges, cut a small hole in the center, make a few slashes for steam to escape and bake at 350F. for an hour or so until bubbly and browned.  Serve with warm crusty bread & tossed salad or cole slaw.  : )

                          LUMPIANG MACAO
10 pcs. lumpia wrappers or spring roll wrappers
1/2 lb. ground pork
1/4 lb. raw shrimps, shelled, deveined and chopped
1/4 cup each of turnips and carrots, pared and grated
1 clove garlic, minced

1 egg slightly beaten
3 tbsp. chopped onions, 1 tbsp. soy sauce,1 tsp. sugar,1/2 tsp. salt,1/8 tsp. pepper
Cooking oil
     Place all but wrappers and oil, in a mixing bowl and combine.  Divide the mixture evenly amongst the wrappers and wrap making a long thin cylinder. Moisten ends with water to seal. Fry a few pieces at a time in medium hot oil for 5 - 8  minutes, rolling each piece to brown all  sides evenly.   Drain.  Cut into bite-size pieces. Serve hot with a sweet and sour sauce.

MUSHROOMS WITH CRAB STUFFING

1 dozen medium white mushroom caps, washed and drained
6 ounces crabmeat, deshelled and flaked
1 egg, slightly beaten
2/3 cup fresh breadcrumbs, moistened with water
3 tsps. chopped fresh parsley
2 tbsps. each of chopped celery and onion
1 tsp. lemon grated lemon rind
Salt, ground black pepper to taste
