ZUCCHINI CASSEROLE 2 lbs zucchini sliced 3/8" thick or diced in 3/8" cubes to make 7 cups 1/4 cup chopped onion 1- 10 3/4 ounce can Campbells Cream of Chicken soup 1 cup dairy sour cream 1 cup shredded carrot 1/4 cup butter or margarine 1 box Kellogg's Croutettes Stuffing Mix

Cook squash & onion in boiling water until tender. Drain well. Combine soup & sour cream. Stir in carrot. Fold in squash & onion. Melt butter/margarine & toss with croutettes. Then do one of the following: (a) spread half the stuffing mix in a 12x7x2" baking dish. Cover with zucchini mixture & top w/remaining croutettes, or (b) combine all ingredients together & put in the 12x7x2" baking dish. (I usually give it a spritz of Pam). Then bake at 350 degrees, uncovered, til heated through, 25-30 minutes. Recipe compliments of Lawana Gray of Oregon.

PORK & SAUERKRAUT This is a family tradition on New Years Day at our home. My maternal grandmother was Pennsylvania Dutch & believed pork & sauerkraut to bring good luck in the coming year (Perhaps a good cure for a hangover. Hahaha : ) Select a nice pork roast. Crown Roast of Pork if you want to be fancy. Place in a roasting pan. Surround w/fresh sauerkraut, well-rinsed to remove some of the brine. Decorate sauerkraut w/tiny white onions & unpeeled apple wedges. Then,sprinkle w/caraway seed. Roast at 400 F. until pork is thoroughly cooked (test around the bone until it no longer runs pink. VALENTINE'S DAY DINNER If you must dine in, do a simple steak, baked potato & tossed salad, but start w/shrimp cocktail (large as you can find, steam & serve on a small bed of lettuce w/cocktail sauce (ketchup spiked w/horseradish & lemon juice).

I heartily recommend the Steak au Poivre (Men love steak. It should be lean, yet well marbled). Do the baked potatoes in the microwave in 10 minutes. Have sour cream sprinkled w/thinly sliced chives on the side. For the salad: Rub bowl w/ garlic, add a mixture of red & green lettuces, sliced tomatoes, cucumbers, carrots, celery, onions, green peppers, black olives, whatever he likes. Top w/ fancy croutons & dressing of his choice. Optional side dish: Breaded arctichoke hearts. Buy canned arctichoke hearts. Slice each in half. Dip in beaten egg, then in equal parts seasoned breadcrumbs & parmesan cheese. Saute until golden. Dessert: Whatever he likes, but be sure to top w/ice cream or frozen yogurt. Vanilla goes w/all. Wine: Check the wine links. Table: Candles are a must. Cloth napkins folded & fanned in the wine glasses. Music: Romantic. Bon Apetit : )
