                 3 BEAN DINNER (CROCK POT)   
        Sauté 1-1/2 lbs. ground beef to get the pink out.  Drain and place in the crockpot.  Slice 1 lb. bacon into one inch lengths.  Sauté, drain and place in

crockpot.  Dice an onion.  Sauté, drain and place in crockpot.  Add 2 lbs. baked beans, 1 lb. chickpeas, 1 lb. red kidney beans, 1/2 c. catsup, 1/2 c. chili sauce, 3 tbsp. brown sugar, 3 tbsp. vinegar.  Mix thoroughly.  Set crockpot on low.  Return 8-10 hours later to a wonderful dish.  Serve with grilled hamburgers, hotdogs, or knockwurst on buns, or as a side dish with steak or pork chops, or by itself, with a nice big salad on the side.
Suggestion:  Assemble in pot at night and place in the refrigerator.  In the morning, plug in the crockpot, and go to work.  When you return home, it's done. 

                        HAM AND CABBAGE
           In a large pot, place a boneless smoked ham.  A butt will do, but choose one of low fat, unsweetened, and without water added, if you're selective.  Then add a head of cabbage, sliced into quarters.  Then several

peeled and quartered potatoes.  If red potatoes are used, peeling is unnecessary.  Add water to cover and a bay leaf.   Boil for an hour.  Serve with crusty bread and ale.  : )
Variety:  Add a cup or so of peeled baby carrots for color and/or a teaspoonful of dried mustard for flavor.
Option:  You might use a fresh ham, but who would boil a fresh ham ??  Bake it, debone and trim the fat,  and proceed above (tossing in the marrow bone for flavor.  : )

SOUTH EAST ASIAN SPRING ROLLS

     Boil one pound lean pork and/or chicken until done, drain and set aside to cool, then slice thinly and cut into thin strips.  Boil 1/2 pound medium shrimp in shells until pink.  Drain and set aside to cool.  Then shell, devein and slice lengthwise.

     Wash leaf lettuce, drain, and set aside.  Wash 1/2 pound bean sprouts and set aside.  Wash two cucumbers.  Peel on four sides, cut in half, quarter each half and slice lengthwise very thinly.   Wash and slice in half one bunch chives, and set aside.
     Soak 10 ounces rice vermicelli for 1/2 hour in warm water, cut into 6 inch lengths, then steam until soft and set aside. 

     Soak dry rice paper in warm water until slightly softened.  Place each on flat surface. Upon each place a quarter leaf of lettuce.  Upon lettuce place in a circle 1.5 tbsp. rice vermicelli, a few bean sprouts over vermicelli,  a tsp. meat on bean sprouts, then a few strips of cucumber, and two slices of shrimp on top.  Roll rice paper halfway, fold in sides, place a pinch of chives in middle of fold, then close roll.   Dip in Choy Sum Sauce.   Enjoy a piece of the East compliments of Valerie!!  :  )
