GOOSE IS A NATURAL LUXURY PRODUCT.
As we approach Christmas and the New Year for 2007-8 we again have pleasure in
contacting you to offer our fresh, oven ready geese and our list of specialist products
which we import from the goose production areas of France. Our geese are, as ever,
free range as soon as they come into full feather and are fed no artificial
additives or chemical growth enhancers, only grass and grain.
This year Christmas falls on a Tuesday and this, for long distance deliveries, throws
up a problem, as they will have to be packed and delivered before the weekend.
PRICES
Prices this year will be at £5.85 per lb or 454 grams.
NB. Please secure your goose for Christmas or the New Year by ordering in good
time by returning the form to us immediately. Although we have increased the flock
back to more or less full production we are taking stalls at some Christmas Charity
Sales for the goods we import from France and we will be offering our oven ready
geese at those events. we would hate to fail to have a goose for our regular customers
if you delay.
WEIGHTS REQUIRED
Our geese are normally available from about 7 lbs. (2.95 kgs). to about 12 lbs. (5.45
kgs). There are always some geese that are lighter and a few which are heavier in
most years. Please let us know if you are looking for something larger and we will try
to help.
For some cold meat to be left after the main meal, we would recommend
approximately 1 ½ lbs (681 grams) per person (cold goose is delightful or you can
make a delicious risotto).
For a good helping at the main meal but little or no cold meat to eat later, allow
approximately 1 Ό lbs. (600 grams) per person.
RECIPES and RECEIPTS
We send an excellent recipe for roast goose as an acknowledgment for each order
received. Your order number will be at the top. It is important to retain your
number if you need to talk to us about your order. The sheet gives a step by step
indication of how to roast your goose and says what equipment we recommend for
cooking. It also has some important tips on how to carve a goose. There are other
recipes for stuffings and sauces and a wonderful recipe for making the liver into pate.
GOOSE FAT
Please remember that the fat from a roasted goose is wonderful for cooking generally
(tubs can be purchased from some of the better delicatessens). It quite simply makes
the best roast potatoes ever and is excellent for roasting and frying generally. So do
keep the fat when you cook your goose in your fridge or you can freeze some for use
later. In tests undertaken for the British Goose Producers Association we found that
compared to most other meats goose fat is low in saturates and high in poly and
mono-unsaturates. An added bonus.
NB Geese can be delivered fresh for Christmas or New Year or frozen for any other
special date through the year while stocks last.

You will find this listed on your goose order form. This is highly recommended to be
eaten with goose, hot or cold ham or as a chutney with cold or hot meat. This is the
sixth year we have offered this delicious sauce. We will send this to you with your
goose or your other goods when you order.

Please give details on the order form of when and where we can deliver or contact us
for delivery through the year. We can deliver your goose to a neighbour or it can be left
in a special place if no one will be in. (Please specify). If there are complications we
will telephone to confirm arrangements.

(If you can take delivery on 13th or 14th December and freeze your goose, we can offer
a £5 discount per goose.)
Geese will be delivered on Thursday 20th or Friday 21st December, or Friday 28th
December for the New Year. Please indicate your preferred date on the order form.
Your goose can be left in a porch, a shed, a garage or greenhouse, or delivered to a
neighbour if no one will be in. If there are problems, we will telephone to confirm
arrangements.

WHAT TO DO ON ARRIVAL OF YOUR GOOSE
Because Christmas falls on a Tuesday this is a difficult year. If you are going to eat
the goose within two or three days, take the goose out of the packing and the plastic
bag at once on arrival; remove the giblets and spare fat parcels from inside the goose
and leave the flap of skin open and the goose loosely wrapped in the grease proof
paper to let air circulate round it and in it. Place the giblets etc. in a really cold
refrigerator with the goose if you have room if you wish to eat it soon or you can put
the goose in a really cool larder, if you have one, for a day or so. If you need to keep
it for longer than a couple of days, pop goose and giblets in your deep freeze.
Geese really freeze extremely well being a moist meat and it will take no harm at all
and you will know that it is safe. Allow to defrost in a warm room for about 8 hours or,
24 hours if in an ordinary fridge ready to stuff the night before or on the day of cooking.

can supply. If there is a refund due we will enclose this in an envelope attached to your
Goose. If by arrangement you receive a larger goose than ordered and there is an
amount of over £1.50 due we will note this on the copy invoice and could you please
send the balance.
