Fajita Veggies w/ Kumquats (or Citrus Zest)

1 whole red onion
1 whole rutabaga
1 whole red pepper
1 small daikon
1 small jicama
10 whole kumquats -- seeded and sliced
OR
the zest of one orange & one lemon
1 bunch leeks -- green tops
1 medium zucchini
3 cloves garlic
2 inches ginger
1/4 cup sesame seeds
1/2 pound tofu -- crumbled
1/2 teaspoon schezwan pepper
1/2 teaspoon cumin seed
1 teaspoon anise seed
1 tablespoon California red chili powder
2 tablespoons hatcho miso
1 tablespoon red miso
2/3 cup witches brew
1/3 cup sherry
2 tablespoons olive oil
Cut all veggies into large julienne or shape of your choice. Blend liquids and miso. Saute onions in oil. Add leeks and saute till leeks begin to color. Add spices, citrus, ginger and garlic. Toss till fragrant. Add other veggies and toss until they begin to soften. When veggies are tender turn off heat and add liquid, miso mixture.
