Crockpot Black-Eyed Peas
CROCKPOT BLACK-EYED PEAS

I love this recipe...it’s so easy and delicious, and of course, incorporates my favorite cooking appliance! This recipes makes enough for extra to freeze and use later. Black-eyed peas are wonderfully nutritious, and tasty. Omit the bacon/ham if you are a vegetarian. I have used the vegetarian seasoning Bakon, which gives a meaty, smoky flavor to the beans without meat.


1 - 16 oz. package black-eyed peas, rinsed and sorted

1 medium onion, diced

1/2 cup (or more) diced ham (or may use any of the following: 1 hambone, 3-4 slices bacon)

1-2 Tbs. minced garlic

1-2 tsp. seasoning salt

black pepper to taste

Using instructions on the back of the package of black-eyed peas, let the peas come to a boil. Remove peas from the burner and let stand overnight. In the morning, drain the water and place the peas in a crockpot. Add all other ingredients, plus enough water to cover the mixture. Stir well to mix. Cover and cook on LOW setting for approximately 8-10 hours.
