Jo Ann's Fruit Salad
JO ANN’S FRUIT SALAD

I look for ways to use cabbage because of it’s nutrition and ease of preparation. Use shredded cabbage from the packaged salads in your produce section if time is a premium. Try this and see what you think.


4 cups cabbage, shredded

1/2 cup mandarin oranges, drained

1/2 cup pineapple chunks, drained, reserve juice

1/2 cup apple, chopped*

1/2 cup reduced fat salad dressing or mayonnaise

2 Tbs. pineapple juice

1/4 cup nutmeg

1 tsp. sugar or sugar substitute

Shred cabbage, combine with fruit. Mix nutmeg, juice and sugar with salad dressing. Add to cabbage mixture. Toss to coat evenly. Chill well and serve.

Serves 4-6.

*Use a product like Fruit Fresh on your chopped apples to keep them from turning brown. If you don’t have any available, dip them in lemon-lime soda pop. This is a trick from keeping chopped apples nice and fresh looking.
