Multi-Purpose Dough
MULTI-PURPOSE DOUGH

If you like the convenience of canned biscuit dough, then you might enjoy mixing and using this versatile and inexpensive dough recipe. Very similar to the “tubes” of dough, it can be used for biscuits, pizza dough, doughnuts, pigs in a blanket, little breakfast pizzas, etc. Use your imagination...anything you have used canned biscuits for you can use this for!

This recipe is for an automatic bread machine, but may be made by hand.

1 cup warm milk

1/4 cup sugar (I put a slight bit more if making doughnuts)

3/4 tsp. salt

1 Tbs. yeast

1/4 cup canola oil

3/4 cup mashed potatoes, unseasoned (I like to use the correct amount of potato flakes, made according to package directions omitting butter and any seasonings)

2 cups Better for Bread flour

1 1/2 cups whole wheat flour

Place all ingredients in bread machine in order suggested by the manufacturer. Set on dough cycle, and pull out at the end of the cycle. Using a flour dusted surface, handle dough gently, turning only slightly until all surfaces are no longer sticky. Roll out desired amount into desired thickness and cut into biscuits. Place on an ungreased baking sheet, and bake at 400 degrees until brown (about 8-10 minutes).

You may use all white flour to total 3 1/2 cups, if desired. This dough will keep in the refrigerator approximately 4-5 days.
