Steaks and Roasted Onions
- marinate porterhouse T-bone in balsamic vinegar or worcestershire sauce,
and steak seasoning. Set fire in pit and wait until coals turn gray.
add russet potatoes wraped in foil first this takes an hour or more,
prep onions by peeling and cutting out the core and stuffing with margarine,
salt and pepper. wrap tightly with foil. It takes about 30-45
min. until onions are soft. Grill steak for 15 min., turning once,
or until desired doneness.
Fajitas - take a skirt or
flank steak(the better choice) and marinate in refrigerator for 2 hours.
The marinade is 1 cup olive oil, 1/3 cup worcestershire sauce or balsamic
vinegar, 2 cloves of minced garlic, and one lemon squeezed or lime.
On the pit place a foil packet off to the side, that has 1 sliced yellow
onion, 1 sliced green bell pepper, and 1 red bell pepper, with margarine
to coat and salt and pepper. grill until soft. grill meat until
done. let rest 5 min. and then slice across grain and serve in warm
flour tortillas, zap a stack in microwave for 30 sec. garnish with
gilled peppers and onions, pico de gallo, sour cream, shredded cheddar
or colby-jack cheese, and guacamole. pico de gallo - chop 1 onion
and 2 tomatoes, add 2-3 finely chopped serrano peppers, 2-3 sprigs of fresh
cilantro, and a fresh squeezed lemon or lime. mix well and marry
for 30 min. guacamole - peel and mash 2 avocadoes, mix in 2 tbls
of pico de gallo, about 1/3 cup sour cream to make creamy, 1-2 cloves garlic
minced, salt, pepper, and half or more of a fresh squeezed lemon.

Roast Beef - Rump Roast
- cut many notches and stuff with whole garlic cloves. coat outside
with steak seaoning. In a cast iron dutch oven brown outside of roast
in a little of oil on stove. put into a 325 degree oven, covered
for an hour or hour and half, until done. Take out roast and let
rest while making gravy. Deglaze pot with a little water and season
if necessary. simmer the natural gravy for 5 min. on stove.
