King Ranch Chicken - The national dish of Texas!
1 chicken boiled and deboned, and cut into pieces, or use can chicken, lay half of it in a well greased 3 qt. casserole dish.  shake some garlic salt and chili powder on the chicken.  cover with half of can cream of chicken soup, half of can cream of mushroom, 6 corn tortillas cut into quarters, 1/2 chopped onion and bell pepper, and chopped stalk of celery. top with half of grated velvetta cheese, and 1/2 cup chicken broth.  Make another layer starting with chicken, and repeating with the rest of ingredients.  Top with a can of ro-tel tomatoes with green chilies.  Bake at 350 for 1 hour. covering the casserole half way through to prevent drying out.
Mexican Cornbread - Preheat 400 degrees 12 inch cast iron skillet. In a bowl mix 2 pkgs of cornbread mix (follow directions, usually 1 egg and 2/3 cup milk) with a can of cream corn.  Brown a pound of chuck with a little chopped onion and steak seasoning.  Pour half of batter in hot skillet. Add drained meat.  Top with a few sliced jalapenos, and 1/2 cup or so of cheddar cheese.  Add rest of batter and bake for one hour. Serve with Pinto Beans.
Chicken Spaghetti - basically, the recipe is the same for King Ranch Chicken, but add cooked spaghetti instead of the tortillas.  Omit the chili powder, but add a can of drained sweet peas.  Bake for only 35 min.
Enchiladas - Make chile gravy by browning 3 Tbl flour in 3 Tbl oil, add 2 cups water and 1 15oz. can of tomato sauce, and add 2 Tbl chili powder and 1 Tbl cumin (comino), bring to a boil and simmer 10 min.  Dip corn tortillas in hot oil for 2 seconds or zap in microwave to soften.  Dip soften tortillas in chili gravy and stuff with 1 Tbl cooked taco meat or shredded cheddar cheese, roll tortillas and put into cake pan. Top with some chili gravy and shredded cheddar, and chopped onions if desired.  Put into preheated 350 degrees oven for 20-25 minutes to melt.
Serve with  Spanish Rice  and refried beans.

Campfire Goodies - form a 1/2 inch thick hamburger patty put a 3/8 inch slice of potato on one side and a slice of onion on the other. season patty with steak seasoning.  cook at 350 for an hour or put on some hot coals near the campfire, turning frequently.
Texas Lasagna - brown 1 1/2 pounds of ground chuck with a chopped onion and a minced clove of garlic, add 2 cans of ro-tel tomatoes, 1 can (15oz.) of tomato sauce, 1 can (8oz.) of whole kernel corn, 1 package of taco seasoning mix, and simmer for 20 minutes.  Preheat oven to 350 use 9x12 pan sprayed with non-stick spray. In a separate bowl mix 1 16oz. cottage cheese with 2 eggs.  In the casserole dish add meat mixture, top with half of cheese mixture, cover with 5-6 corn tortillas, top with 2 cups of shredded monterey jack.  Repeat layers with cheese on the top.  Bake for 25 minutes.
