Pecan Pie - 1 1/2 c pecans (halves or chopped), 3/4 c light corn syrup,
3/4 c brown sugar, 4 eggs, 2 tbl vanilla, and a dash of salt.
Cobbler - 3 cups flour, 1 cup oil, 1/2 cup milk, dash of salt. mix
together, divide in half, line bottom of pan with half, and poke with holes.
add filling, and place on the top dough. Bake 400 degrees until done.
Filling: 4 c blackberries, 1 c sugar, 1/4 c cornstarch, 1/4 c water. Mix
together. Can use peaches, apples, or pears.
Apple or Pear Pie - 6 apples or pears, pared, cored, and sliced, 1
c sugar, cinnamon, 2 tbl flour, 1 stick of margarine or butter.

Cannoli - Filling: 8oz. of ricotta, 1 1/2 c powdered
sugar, 2 tsp vanilla, 2 tsp dried orange peel.
Cassata - One frozen Sara Lee pound cake, while
still frozen cut longwise by thirds, stuff layers with cannoli filling,
one small jar of maraschino cherries, and a small package of pistachios.
Frost with light and fluffly chocolate frosting.Cut into slices and
serve cold.
Rugelach - 8 oz. package cream cheese, 2 sticks
of butter, 2 Tb sugar, 2 cups of sifted flour, 2 egg yolks, 1 tsp vanilla,
pinch of salt
Mix dough with fingertips, and chill dough overnight.
Roll out on floured suface to about 1/4 inch thickness.
Cut dough into strips about 4 inches wide.
Cover with filling and roll up like a jelly roll.
Cut into pieces, and put on greased cookie sheets.
Brush with egg whites and shake on some grandulated sugar.
Bake in a preheated 425 oven for 10-15 minutes.
Filling: use your favorite mixture of preserves, nuts, raisins, etc.
squeeze a half of lemon on filling before using. Popular fillings
are apricot preserves, walnuts, pecans, and raisins.
some people like raspberry, even apple or chocolate.

Tres Leches - 6 Eggs separated, 2 c Sugar, 1/2
c Milk, 2 c Flour, sifted, 2 tsp Baking Powder, 2 tsp Vanilla, 1 tsp Salt
Three Milk Mixture: 8oz. heavy whipping cream, 14oz. can sweetened
condensed milk, 12oz. can evaporated milk, mix together and set aside.
1. Beat egg whites until stiff peaks form.
2. Add vanilla, milk, sugar, and egg yolks, one by one, until mixed
well.
3. Mix dry ingredients together in a separate bowl.
4. Fold in dry ingredients into the wet mixture, strirring very little,
just to blend it.
5. Pour mixture into greased 9x13 cake pan, Bake in a preheated 350
oven, for 25 minutes.
6. Poke holes in cake with fork, and pour over three milk mixture.
7. Cool completely, and Top with Cool Whip or homemade whipped cream.
Serve chilled.
Christmas Orange Cake - 10 inch Bundt pan, grease
and flour, and set aside.
Sift together 3 1/2 c Flour and 1/2 tsp Salt, set aside.
Cream 1 c Butter or Margarine with 2 c Sugar. Then, add 4 eggs
in one at a time.
In a separate bowl, mix 1 tsp baking soda with 1/2 c buttermilk.
Add flour mixture to wet ingredients, alternating with the buttermilk,
combine completely.
Fold in fruit and nut mixture. Pour into the Bundt Pan. And Bake on
300 for 1 Hour and 45 Minutes. When, cake is still hot, poke holes
and pour a mixture of 1 cup Orange Juice with 2 cups of Powdered Sugar.
Refrigerate before removing the cake from the pan.
Fruit and Nut Mixture: 2 (8oz.) Tubs of Candied Orange Peel,
1 8oz. Package of Chopped Dates, 2 Cups of Chopped Walnuts or Pecans, 1
Can (1 1/3oz.) Flaked Coconut (1 1/3 cup),
1/2 Flour and 1 1/4 cup Sugar. Stir together, and set aside.
Chocolate Lava Cake
Italian Ricotta Cheesecake - 2 pre-made shortbread
crusts or make your own.
Filling: 3 c Ricotta cheese, 1/2 c Sugar, 1/4 c Milk, 2 Tb Flour, mix
this to combine, then add 3 eggs at once, and mix to combine, then fold
in 1/4 c golden raisins or chocolate chips, 2 Tb candied orange, lemon,
or citron peel, (Orange and Chocolate is a good combination)
Pour filling into 2 shortbread crusts or 1 recipe homemade crust, and
place pans on cookie sheet and bake on 350 for 45 minutes. Chill
cheesecake and dust with powdered sugar before serving.
Crust: stir together, 3/4 c flour, 3 Tb sugar, 1/2 tsp grated lemon
peel. Cut in 1/3 c butter or margarine, until the pieces are the
size of small peas. Stir in 1 beaten egg yolk.
Use 8 inch springform pan, greased, use 1/3 of dough on the bottom,
and the rest on the sides, about 1 1/2 inches tall. Bake crust on
350 for 7-10 minutes. Cool completely.
