Mashed Potatoes - wash and
peel potatoes (Yukon Gold or Russet) put in pot and bring to boil
in salted water. Cover and simmer for 30 min.. Drain and mash.
Add tablespoon of margarine or butter per pound of potatoes, and add enough
milk to make creamy. add some salt and lots of pepper.
Macaroni & Cheese - cook
macaroni and drain. brown 1/2 cup flour with 1/2 oil. add 4
cups of milk and 2 cups of shredded cheddar cheese, salt and pepper.
Bring to a boil and simmer for 10 min.. Mix with macaroni and pour into
greased casserole, top with some grated cheese and breadcrumbs. bake at
350 degrees for 20-25 min..
Green Beans - Render
6 slices of bacon with a chopped onion, add 1 1/2 lbs. of fresh snapped
green beans, add salt, pepper, and sugar, and enough water to cover.
Cook on a gentle boil for 2 hours.
Broccoli Rice Casserole
- 1 cup rice cooked in 2 cup water. 2 strands of green onion and
1 stalk of celery, chopped and sauteed in a little oil, small jar of chez
whiz, and a pkg of broccoli thawed or some fresh broccoli blanched in salted
water. Mix together, top with grated cheddar cheese, and bake in
a greased casserole for 20-25 min at 350 degrees.
Baked Yellow Squash Casserole
- slice squash about 5 Pounds, add 1/2 cup of finely chopped onion, put
in pot with salted water and boil for 5 min. or until tender. drain
and mash. mix with a little salt, some pepper, stick of margarine, and
1/2 cup to 3/4 cup sugar, and 2 eggs. top with breadcrumbs and bake
in a greased casserole on 350 degrees for 20-25 min..
Dirty Rice Dressing -
cook 1 cup of rice in salted boiling water, cover, and simmer for 15 min.
set aside still covered. brown 1 lb. of ground beef or pork, with
1 chopped onion, 1 chopped green bell pepper, 1 stalk chopped celery, 2
strands of chopped green onions. saute until tender add 2 cloves
of minced fresh garlic, salt, pepper, and 2 sprigs of chopped flat leaf
parsley, cook a minute more, and stir in the 2 cups of cooked rice.
Spanish Rice - for a
main dish stir in a pound of ground chuck after the rice is cooked.
saute in some oil a half of a chopped onion and a half of chopped green
bell pepper until soft, stir in a clove of minced garlic. brown a
cup of long grain rice in the mix. Add 2 cups of boiling chicken
broth and 1/2 can of tomato paste. Cover and simmer for 20 min..
Maque Choux - husk, silk,
and scrape 6 ears of corn. scrape back of corn to release corn milk. set
aside. render 2 slices of bacon add half of chopped onion, half of chopped
green bell pepper, saute until tender, add 2 small chopped tomatoes, corn,
salt, black pepper, and a dash of cayenne pepper. add 1/2 cup milk, bring
to a boil and simmer, covered 20 min, or until tender.
Corn Casserole - 4
eggs beaten, 1 17 oz. can of cream corn, 1 17 oz. can of whole kernel corn,
1 stick of margarine, 1 chopped onion, 1 pkg. of mexican cornbread mix,
1/2 pint of sour cream, and 1 cup of grated cheddar cheese. Mix together
and bake in a greased 2 qt. casserole at 350 degrees for 1 hour.

Fried Corn on the Cob
- Shuck and de-silk corn, bring salted water to a boil and simmer, covered
30 min. drain and dry well. dip corn into chicken
fried batter and dredge into seasoned flour and fry in 350 degree oil
until golden brown.
Onion Rings - same procedure,
but use raw onion slices 1/4 inch. thick double batter, dipping
rings into batter dredging into flour, and repeating. fry until golden
brown.
Pinto Beans - soak beans
overnight. In a pot with water add a ham hock with a chopped onion
and a half bulb of minced garlic. Salt and pepper a lot. cook
on gentle boil 2 hours.
for refried beans fry some leftover beans in a
little oil or lard while mashing.
Black-eyed Peas - render
4 slices of bacon or some salt pork, add 1 chopped onion, and saute until
soft. add 3 cloves of minced garlic and cook a minute more.
add 1 lb. of peas, salt and pepper. cover with water and cook on
gentle boil for 2 hours. add water during cooking if needed.
do not need to soak dried peas.
same basic method for purple hull peas and crowder peas.
Sweet Potato Souffle
- peel 3 pounds of sweet potatoes, cut into baseball size pieces, put into
pot and cover with water and bring to boil, and cook covered for 20-25
min.. drain and mash. stir in a stick of margarine 1 cup of brown
sugar, and 2 eggs. pour into greased casserole. top with 1
cup of chopped pecans mixed with a half stick of melted butter and 1 cup
of brown sugar, and bake at 350 degrees for 30min..
Steamed Cabbage - green
cabbage, peel of outside leaves, core, wash, and cut into big pieces.
render bacon in a pot, add 1 inch or so of lightlt salted water, and bring
to boil. add cabbage and cover and steam on medium low heat until
tender, about 10 min.
Creamed Potatoes - peel
and cut russet potatoes into baseball size pieces. put into pot and
cover with salted water, bring to boil, and simmer for 15-20 min., until
tender but firm. drain and dot potatoes with some margarine.
make a white roux with some flour mixed with some very hot water.
cover the potatoes with this roux. salt and pepper heavily.
French Fries - cut potatoes
into 3/8 inch sticks, small pyramids, or slices. soak in salt water
in refrigerator for at least 2 hours. dry well and blanch in 325
degree oil for 2-3 minutes. cool completely. fry into 350 degree
oil, until floating, about 3-4 minutes.
