Taco Soup - 1 lb. ground
chuck (browned), 1 medium onion (chopped), 1 can of pinto beans, 1 can
red kidney beans, 1 can yellow hominy, 2 cans stewed tomatoes, 1 can ro-tel
tomatoes with green chiles, 1 can of water, 1 small package of ranch dressing
mix, 1 package of taco seasoning.
mix all ingredients in a pot bring to a boil reduce heat to gentle
boil for 35 - 45 minutes.
Harvest Soup - Brown a pound of Italian sausage(casings
removed) and a pound of ground chuck with a medium chopped onion, add clove
of minced garlic, 1 cup of dry red wine, 6 cups beef broth, 2 cans stewed
tomatoes, 3 sliced carrots, 4 sliced zucchini, 1 tablespoon balsamic vinegar,
2 tsp oregano, salt and pepper to taste. bring to a boil and cover
and simmer for half hour or so.
Hambone Soup - Hambone soup is basically stew
beef, but with smoked ham with the hambone cooked into the soup.
My grandmother used spaghetti instead of macaroni, but use what you like.
Stew Beef Soup - dredge 3 pounds of stew beef
into seasoned flour, brown with a little oil. add 2 large chopped
onions, 4 sliced carrots, 4 stalks of celery chopped, 3 cans chopped stewed
tomatoes, and 2 cans tomato sauce, 1 box of macaroni, 4 chopped potatoes,
salt and pepper. bring to a boil and simmer for 2 hours.
Chicken Waldorf Salad
Chili - Saute 1 chopped yellow
onion in 2 Tbl of olive oil, and then add 2 cloves of minced garlic, cook
a minute more. Brown a pound of ground chuck in the pot with the
onions and garlic. Add 2 cans (14.5 oz.) of diced tomatoes, stir
in 2 tsp of cumin, 1 tsp of chili powder, 1/2 tsp of each paprika, ground
oregano, salt, black pepper, and crushed red pepper(optional, adds spiciness).
Add water for thinner texture, if desired. Add 1 tsp of masa flour
to thicken, if desired. Bring to a boil, and simmer for 30 min..
Stir in a can of drained pinto beans, if desired. Serve over cooked
rice and top with shredded cheddar and diced purple onions.
