Fried Cheese - cut mozarella into batons about
half inch by 3 inches. dredge into flour, dip into egg batter ( 1 can evaporated
milk mixed with 2 eggs), roll into italian breadcrumbs(Progresso). fry
at 350 degrees for 1 minute, until cheese beads out.
Fried Mushrooms - dip mushrooms in egg
batter and into seasoned flour( salt, pepper, garlic powder ). fry until
golden brown. Onion Rings - same as above but dip into batter and
dredge the flour twice.
Fried Rice Balls - cook medium grain rice batter
then flour or breadcrumbs.
Fried Potato Balls
Bruschetta - Use good olive oil, mince 2 cloves
garlic. add to oil and let infuse for half hour or so drizzle oil over
cut half inch french bread slices and grill on grill or in pan on stove
or broil in oven. until browned. top with some dry parsley for color.
for a variation dunk bread into olive oil until soft, but only pan fry
or broil in oven.
Salsa - one can of crushed tomatoes and one can
whole stewed tomatoes, 1 can ro-tel tomatoes, 2-3 cloves finely minced
garlic, 2 sprigs of fresh cilantro. Mix in blender until pureed
and let sit for half hour before using.
Chili con Queso - 1 # of Kraft Deluxe American
Cheese Loaf, one 4 oz. can of diced green chiles, drained, one 5 oz. can
evaporated milk, 2 Tablespoons of each celery and onions, finely chopped,
12 slices of pickled jalapenos, finely chopped, 1/4 cup of water.
Melt slowly over low heat, occationally stirring.
Armadillo Eggs - shredded cheddar jalapenos
ground chuck
Shrimp Kisses - medium shrimp (30-40 count)
top with pickled jalapeno slice and tsp of shredded cheddar and wrap with
half slice of bacon. toothpick and grill in pan for 2 minutes each side.
Stuffed Jalapenos - trim off root end and
scrape out the seeds and veins. Stuff canoes with cheddar or cream
cheese. dip into batter, dredge into flour, dip back into batter,
roll in breadcrumbs or crushed saltines or corn tortilla chips.
Nachos - cut white corn tortillas into quarters,
and fry until crisp about 1-2 minutes, drizzle heated and thinned refried
beans, add shredded cheddar or colby/jack and melt in microwave until melted
about a minute, top with sliced pickled jalapenos, pico de gallo, guacamole,
sour cream, shredded lettuce, and/or diced tomatoes. add meat on top of
cheese if desied. pico de gallo and

Quesadillas - basic method for grill cheese,
lightly butter fajita size flour tortillas top other side with shredded
cheese. grill in pan until toasted and melted. stuff with grilled
fajita chicken and pico de gallo. cut in half and serve with sides of guacamole
