Desert tips
- Fudge won't "sugar" if you add a dash of cream of tarter
- Soften "hard as rock" brown sugar by placing a slice of
soft bread in the package and closing tightly. In a couple of hours it will be soft again.
- To improve an inexpensive cake mix, add one tablespoon of butter
to the batter for a richer-tasting cake.
- If your layer cakes stick to the bottom of their pans, return them
to a warm oven briefly. The layers then should come out intact.
- Never allow chocolate to simmer or com to a boil. Heat until melted and remove promptly.
Main entree tips
- Tenderize tough meat by rubbing both sides with vinegar and olive
oil. Let stand two hours before cooking.
- Pork chops which are light in color are corn fed.
- When broiling meats on a rack, place a piece or two of dry bread
in the broiler pan to soak up the dripped fat.
- By rubbing the skin of chicken with mayonnaise before baking, the
skin will turn crisp and brown.
- 1/2 tsp of dry mustard added to a flour mix for frying chicken or
pork chops adds great flavor.
Salad tips
- Always shake oil and vinegar dressing just before using.
- Adding a small amount of beet vinegar to mayonnaise will give it a
pretty color for salads.
- For crunchy cole slaw, cut cabbage in half and soak in salted
water for an hour. Drain well and proceed with recipe.
