I would like to invite you to join the Irish Heritage E-mail Group. I send out five e-mail's, Friday and Saturday, every other week. The e-mail consists of Irish History, Myths & Legends, News from Ireland, jokes, Gaelic lessons , Irish Recipes and Irish politics. The Irish Heritage email group is dedicated to educating the Irish Americans, Irish-Australians, Irish-Canadians, etc., of their culture and history. In our efforts we hope Irish-Americans, Australians, Canadians learn there is more to being Irish then Leprechauns, green beer and celebrating Saint Patrick's Day once a year. Our IH membership consists of mostly Irish Americans, but there are many members from Ireland. This is a free service. It will only cost you the time and effort to learn about Ireland's rich past. IRISH CABBAGE SOUP
6 sprigs parsley
1 bay leaf
5 slices thick-cut bacon, diced
2 medium onions, sliced
1 turnip, sliced
2 carrots, diced
2 potatoes, in 3/4 inch cubes
1 head green cabbage, shredded
6 cups chicken stock
Tie parsley and bay leaf together or put in cheesecloth. This is a bouquet garni.
In a heavy 6 quart saucepan or Dutch oven, cook bacon until crisp. Remove with a slotted spoon and reserve for garnish.
Put bouquet garni and remaining ingredients, except for salt and pepper, in pot. Bring to a boil. When boiling, lower heat to medium-low and simmer, partially covered, for 1 to 1 1/2 hours or until all ingredients have softened.
Season with salt and pepper to taste. Pour into hot soup bowls and garnish with reserved bacon.
