Slice the tomatoes into 1/4-1/2 inch slices. Salt and pepper them to taste.
Dip slices in beaten egg, then in the corn meal.
Fry in hot oil about three minutes on each side until golden brown.

Green Tomato Jelly
Grind up green tomatoes. Place in large pan over medium heat.
You use 4 cups tomato for each 4 cups sugar and add 1 large box of your favorite flavor of Jello. Cook until you cannot stir down a roiling boil. Pour into canning jars, seal with lid and ring and turn jars upside down.

Fresh Tomato Soup
6 Tomatoes; medium size or 2 lb Italian plum tomatoes
1 Onion; chopped
1 Celery; stalk, chopped
2 cup Chicken broth (or 1 can Campbell's)
1 TBSP. Tomato paste
1/2 tsp. Basil; dried
1/4 tsp. Pepper
1/2 tsp. Salt
Cut tomatoes into wedges and place in 1 1/2-quart saucepan with other ingredients. Simmer uncovered 30 minutes.
Strain to remove tomato skins and seeds.
Serve with toasted French Bread.

Dad's Salsa
1 medium green pepper, chopped
2 celery ribs, chopped
1 small onion, chopped
1 medium carrot, chopped
1/4 cup minced fresh cilantro or parsley
2 cups fresh tomatoes, diced
1/2 cup water
1/2 cup tomato sauce
1/3 cup tomato paste
3 garlic cloves, minced
1 tablespoon lemon juice
1/4 teaspoon pepper
Tortilla chips
In a bowl, combine the first seven ingredients. In another bowl, combine the water, tomato sauce, tomato paste, garlic, lemon juice and pepper; stir into the vegetable mixture. Serve with chips. Refrigerate leftovers. Yield: about 3 cups.

Baked Green Tomatoes
¾ cup coarse buttery cracker crumbs
4 large firm green tomatoes
Salt and pepper
½ cup brown sugar
4 tablespoons butter
Cut green tomatoes in ½-inch slices; arrange green tomato slices in a greased baking dish. Season sliced green tomatoes with salt and pepper and spread each with about ½ tablespoon brown sugar.Cover sliced green tomatoes with crumbs and dot with butter. Bake at 350 degrees until green tomatoes tender but still firm, or about 25-30 minutes. Serves from four to six.
